Morristown's Temple of Mixology in a 1920's-STYLE COCKTAIL LOUNGE
The Vail Bar is located in the back of the first floor of the mansion, just behind the grand staircase. Originally constructed as the mansion’s library, the room now serves as the epicenter of Jockey Hollow’s cocktail culture. The room exudes a clubby warmth; it’s the perfect place to meet after work for a cocktail and oysters, to enjoy a meal at the bar, to marvel at the cocktail creations being composed in front of you, or simply to party the night away.
Our bartending team has created a selection of seasonally-inspired specialty cocktails as well as a menu of classics cocktails catalogued by distillate. The back bar contains over 100 spirits ranging from everyday favorites to rare bottles. Jockey Hollow’s extensive wine list and beer program are also available.
Bar seats are available on a first come, first serve basis. Dinner reservations for table seating are available Wednesday through Sunday, up to one month in advance.

Eugène Carrel, Méthode Traditionnelle Brut Rosé | NV {Complex Rosé Sparkler from The Foothills of the Alps}
80% Gamay, with 10% each of Mondeuse and Pinot Noir. The French Alps are perfect for sparkling wine due to the cool conditions, and this is an irresistible example. It’s made using the methode traditionelle to give it some richness. Its very light pink color leads you down the path of the style – crisp and light with mouth-watering acidity and zesty citrus aromas as well as red cherry and raspberry. Extremely drinkable and refreshing.

Staffelter Hof Riesling Trocken 862 | 2019 {If you hate riesling we are not friends}
The Staffelter Hof estate, located in Kröv in the Mosel region, is not only the oldest winery in the world, it’s also one of the world’s oldest companies of any kind. It was founded in the year 862 (yes, 862!). It offers a still rather backward nose made of mirabelle, pear, aniseed herbs, dark spices, a hint of whipped cream, citrusy elements, and smoke. The wine is beautifully juicy and tart on the intense and mineral-infused palate and leaves a great sense of tart, mineral, and herbal fruits in the finish.

Alpha Estate, Single Vineyard Turtles Block Malagouzia | 2022 {Super Complex Greek Stunner !!}
Brilliant!!! light yellow in color with greenish tints. Strong and lively nose, typical Malagouzia, suggesting rose petal with floral aromas and sweet spices, melon, litchi with a note of honeysuckle. Round and mellow on the palate, fat but balanced, high in alcohol with plenty of finesse. Well structured, reminding the nose aromas with a hint of rosemary. A richly textured wine with superb length and balance. A classy wine with long finish and persistent aromas.

Herdade do Cebolal, Vale das Éguas Branco | 2020 {Warm Weather Portuguese Patio Pounder}
Herdade do Cebolal is the southernmost estate found within the Setúbal Peninsula 170K south of Lisbon and in close proximity to the Atlantic Ocean. 65% Antão Vaz, 28% Fernão Pires, 7% Arinto planted to soils of clay, sand, shale, gypsum, and limestone. Hand harvested, fermentation with native yeasts in stainless steel. Aged 10 months on less, with batonage for first two weeks, in stainless steel. 580 cases made!

La Cappuccina, Soave | 2021 {There is life beyond Pinot Grigio}
Since 1890, the Tessari family has been making wine at its La Cappuccina estate at Costalunga di Monteforte d’Alpone, in the Soave d.o.c. wine zone to the east of Verona – the romantic town of Romeo and Juliet. In this Soave we find all the typical characteristics of Garganegafrom around Verona. But, especially, we can recognize its area of origin: the black earth of the Alpone Valley. It is a character that infuses every wine from here with pronounced aromatic qualities and precise perfumes, with dominant notes of citrus fruits and warm graphite.

Clay on the top soil and then moves to limestone, giving the grapes here bright fruit and minerality. And that is ABUNDANTLY CLEAR on this wine. 50% Grenache, 30% Cinsault, 10% Syrah, 10% Mourvedre and Bourboulenc and Clairette. 50 year old vines on average. And winemaking is very clean and in cement for the whole ride.

Domaine des Tourelles, Bekaa Valley Rosé | 2020 {This Lebanese Rosé can easily compete with bandol}
Wine production in Lebanon dates back to the times of antiquity when the Greeks and Romans found inspiration for winemaking in this region. The mountains surrounding the Bekaa Valley is some of the most highly regarded terroir with its limestone soil base and its extraordinary altitude. The Rosé is a blend of Cinsault, Syrah and Tempranillo. Grown over sand and clay-limestone soils, the grapes are hand harvested and fermented using indigenous yeasts in stainless steel tanks. The Cinsault and Tempranillos are direct pressed and the Syrah is saignee.

A much more straightforward expression than previous vintages, this is such a fantastic entry into orange wine. The tongue in cheek name,‘Pell a Pell’ translates to ‘Skin to Skin’. Certified Organic, zero pesticides/herbicides/chemicals, un-ploughed soil, hand harvested, unfined/unfiltered. Fermented in stainless with wild yeast for 15 days on skins, aged 5 months in stainless.

The Borman’s farming methods are approached as sustainably as possible. All of the grapes are handpicked to secure the quality of the fruit before they enter the cellar. A hands-off approach towards vinification takes place in the cellar, with only ambient yeast fermentations being used, showcasing the terroir and exposing a sense of place in the wines. Reenen has dialed back the amount of new oak greatly and added alternative fermentation and aging vessels (concrete, terra cotta, etc).

Weingut Thörle, Rheinhessen Spätburgunder | 2019 {German Pinot Noir is on Fire}
The fully mature grapes are hand-picked at the ideal moment of ripeness during the harves season. After they are sorted, destemmed and crushed in the cellar. The must is fermented spontaneously on the skins for 3-4 weeks. The cap is punched down manually three times each day (pigeage). After fermentation the wine is pressed with low pressure, settled and transferred to French 225l oak barrels. Following the completion of malolactic fermentation, the wine stays in the barrels for 20 months. Bottled unfiltered without racking or fining.

Orēnia, Duche D'Uzes Rouge | 2019 {Southern Rhone in High Heels}
Duché d’Uzès is a small AOP (308 hectares) that was created in June 2012. 80% Syrah, 20% Grenache. The parcels are located on clay-limestone ridges with good drainage. A strict pruning ensures beautiful healthy bunches and good ripeness. That is an ideal configuration for the Syrah. It shows a dark purple color, candied black fruit and spicy aromas, and the violet notes typical of the best Syrah wines.

Bosman Family Vineyards, Twyfeling Cinsaut | 2020 {Just a Ludicrously Elegant wine}
Cinsaut -- sometimes Sanso, sometimes Cinsault -- is a workhorse grape in South Africa, usually cultivated from bush vines. This is a modern take on a old and neglected champion of Cape winemaking. Sorted, de-stemmed, slightly crushed grapes fermented at lower temperatures (24-26 C) and matured in a 225l and a second and third fill French oak barrels. Natural, rustic, delicious. Deep plum center with purple rim. Lovely fresh berry flavors with hints of tobacco, spice, and savory notes. Luscious and concentrated although of medium body. A bold wine with an elegant structure.

England is an exciting area for sparkling winemakers. Think Champagne 30 years ago, English sparkling wine dates back to 1662. 'British Fizz' is produced using the same method as Champagne. Erpacrife is located in Castagnole delle Lanze, midway between Asti and Alba. The team of winemaker-owners — Erik Dogliotti, Paolo Stella, Cristian Calatroni, and Federico Scarzello (get it?) — draw Nebbiolo for this traditional-method sparkler from the one-hectare Madonna di Como vineyard, in Alba, which was planted in 1985. The grapes are harvested manually into small bins, and primary fermentation is kept cold to protect the delicate fruit flavors. The wine rests en tirage for 24 months prior to disgorgement, and is corked without dosage. It enjoys 36 additional months of repose in the cellar prior to release. Bin: 5013

Decideret, Lees Is More Apple Sparkling Wine | 2020
Certified organic. A “field blend” made from apples from Vigmosegaard orchard at Lilleø: Bramley (37%), mixed French cider varieties like Douce Coet, Kermerrien, Binet Rouge (54 %), and a touch of mixed garden apples (9%). The cider varieties, after harvest in 2018 and 12 months of fermentation, were blended with Bramley apples from 2019. After bottling in January 2020, the wine spent 18 months on the lees before disgorgement (Sept ’21). Unfiltered, no SO2 added.Bin: 2103

Pinot Noir, Pinot Meunier and Charodnnay all grown with love. Here we get to see them in their rawest form from the Konpira Maru boys. It’s like Spring in a bottle! Gessami is an organically grown blend of Muscat, Gewurztraminer and Sauvignon Blanc, all very aromatic varietals. There is a lovely bouquet of white flowers and orange rind, an interesting combo to say the least. What stands out to me is the texture and fullness of the wine achieved without oak-aging. This is undoubtedly due to the Gewurztraminer. This white is much rounder than a lean New Zealand or French Sauvignon Blanc for instance, but much more refreshing than a full-bodied Chardonnay.
