At Jockey Hollow Bar & Kitchen, the a la carte menus through the entire restaurant feature only the finest local fish, heritage meats and the seasonal bounty of local Jersey farms and dairies.
The Washington Room, located upstairs in the original living quarters of the mansion, will offer Chef Valenti's a la carte menu, but with the added luxury of a white tablecloth atmosphere that is perfect for a relaxed fine dining experience or a quiet and discreet business dinner.

Jean Claude Buecher, Esquisse Crémant d' Alsace | 2019 {You May Not Go Back To Champagne}
To the eye, the bubbles are fine and follow each other in diffuse cords and the color is pale yellow. On the nose, the crémant is open and expressive, with notes of butter and brioche as well as a touch of peach and yellow fruit. In the mouth, you'll experience a supple and enveloping flavor that develops in breadth and finishes with freshness with grilled notes and fresh bitterness.

Alpha Estate, Single Vineyard Turtles Block Malagouzia | 2022 {Super Complex Greek Stunner !!}
Brilliant!!! light yellow in color with greenish tints. Strong and lively nose, typical Malagouzia, suggesting rose petal with floral aromas and sweet spices, melon, litchi with a note of honeysuckle. Round and mellow on the palate, fat but balanced, high in alcohol with plenty of finesse. Well structured, reminding the nose aromas with a hint of rosemary. A richly textured wine with superb length and balance. A classy wine with long finish and persistent aromas.

100% Garganega from a 1.5-hectare parcel of vines at 300 metres above sea level on Monte San Piero’s volcanic soils. A rich, powerful expressive wine with smoke, baking spices, ripe nectarine, hints of dried pineapple and grilled nuts – lots going on here.

Fuchs, Steiermark Sauvignon Blanc | 2022 {Austria's Answer To Sancerre}
After the grapes are harvested, maceration lasts 8 hours after which the must is softly pressed. The must is naturally sedimented. Fermentation lasts 18 days in stainless steel tanks at a controlled temperature. After fermentation, the wine is aged for 6 months in stainless steel tanks. Light straw hue. Hints of spice and light aromas of gooseberries. Nice acidity on the palate, with a long, satisfying finish.

Fondo Antico, I Versi Sicilian Bianco | 2021 {Pinot Grigio? Never Heard of It}
Fun, young, this wine is a great aperitif expressing the varietals of three ancient Sicilian vines: Grillo, Insolia and Grecanico. On the nose the wine opens with notes of ripe white fruit given by Inzolia, together with fresher and more floral aromas given by Grillo, to finish with spicy notes coming from Grecanico. Even on the palate, Grillo gives structure and acidity, Inzolia sweetness and softness and Grecanico returns to the aroma with its typical spiciness.

Weingut Sighardt Donabaum, Grüner Veltliner | 2021 {Mineral, Stone Fruit, White Pepper}
Weingut Sighardt Donabaum, located in Spitz, was first mentioned in the 12th century and has been family-owned since 1833. Their 11 ha of vineyards, 80% of which are terraced vineyards on weather-beaten gneiss and granite (primary rock soil), are in the best locations of the region and are extremely difficult to work, but this wine is worth it. Each vineyard is influenced by a different micro-climate.

Domaine des Tourelles, Bekaa Valley Rosè | 2021
40% Cinsault, 30% Syrah, 30% Tempranillo. The 15 to 20 year old vines grow in dry-farmed, high elevation vineyards, 1,050 meters (3,445 feet) above sea level. The soil is sandy limestone. The grapes are hand-harvested in small boxes. The grapes ferment separately in stainless steel tanks. Rosé “de saignée” for the Syrah and “de presse” for both Cinsault and Tempranillo. The wine is then blended, fined and filtered.

The Borman’s farming methods are approached as sustainably as possible. All of the grapes are handpicked to secure the quality of the fruit before they enter the cellar. A hands-off approach towards vinification takes place in the cellar, with only ambient yeast fermentations being used, showcasing the terroir and exposing a sense of place in the wines. Reenen has dialed back the amount of new oak greatly and added alternative fermentation and aging vessels (concrete, terra cotta, etc).

This husband-and-wife team has spent the last decade in the nooks and crannies of the wine-geek world, slowly building a reputation for pristine, delicate Pinot Noirs from Baden.

Domaine de la Lande, Chinon | 2021 {There Wouldn't be Cabernet Sauvignon Without it's Parent Cabernet Franc}
100% Cabernet Franc Soil: Sand on the banks of the Loire. 15 to 35 year vines. The grapes are 100% destemmed before being fermented in concrete tank pump overs and punch downs for 15 days. The wine ages in concrete tank for 9 months before bottling. François is a fan of completely destemming his Cabernet Franc, as to avoid the underripe green notes than can dominate the wines of this region. With a certain style in mind, monsieur will also pick later than usual for the area.

Bosman Family Vineyards, Twyfeling Cinsaut | 2020 {Just a Ludicrously Elegant wine}
Cinsaut -- sometimes Sanso, sometimes Cinsault -- is a workhorse grape in South Africa, usually cultivated from bush vines. This is a modern take on a old and neglected champion of Cape winemaking. Sorted, de-stemmed, slightly crushed grapes fermented at lower temperatures (24-26 C) and matured in a 225l and a second and third fill French oak barrels. Natural, rustic, delicious. Deep plum center with purple rim. Lovely fresh berry flavors with hints of tobacco, spice, and savory notes. Luscious and concentrated although of medium body. A bold wine with an elegant structure.

Yves Cuilleron, Syrah Les Vignes d'a Côté | 2021 {Like a Baby St.Joseph}
100% Syrah from vines planted on a mix of granite and alluvial soils. The grapes are handpicked and then sorted, crushed and partially destemmed in the cellar. Fermented in open top, temperature-controlled vats for about 3 weeks, with regular cap-punching and pumping-over. Alcoholic fermentation in vats with native yeasts and malolactic fermentation in barrels. The wine is then aged eight months in a mix of stainless and barrel before being bottled.

The cider varieties, after harvest in 2018 and 12 months of fermentation, were blended with Bramley apples from 2019. Ochota Barrels, A Forest Pinot Noir | 2021
Grapes for this wine are grown on two sites high in the cool Adelaide Hills. One is planted with Dijon 114 and 115, and the other Dijon 777 clones, both the sites and the clones are kept separate for the initial fermentation. 100% whole bunches are cold soaked and the different vineyards and clones are fermented separately with wild yeasts in a mix of old and new French oak barriques. During the first three months, the barrels are rolled occasionally and gently hand plunged. After ten months the wine is carefully gravity racked to tanks before being bottled unfined and unfiltered.
